Crispy Skin Salmon, popcorn cauliflower and vegetables

Fish in a lot of families is either something that is loved or hated. I used to disguise the fish by crumbing it. The kids called it schnitzel fish. Gradually I started cooking it differently and introducing different types of fish. Salmon has become my kids favourite.

Ingredients Fish

  • 3 salmon fillets cut in half lengthwise
  • Salt & pepper
  • Coconut oil (or vegetable oil)

 Ingredients Pop Corn Cauliflower

  • Head of cauliflower cut into florets
  • Popcorn seasoning
  • Olive oil

Heat oven to 180C.

Drizzle cauliflower with olive oil and sprinkle popcorn seasoning over every piece. Toss around in baking tray, cover with foil. Place in oven for 20-30 mins or until cauliflower is tender

 In a frying pan melt some coconut oil on a medium heat.

On skin side, season salmon with salt and pepper. Place skin side down into the hot pan. Leave until the fish colour changes and starts rising towards the centre, approximately 3-5 mins. Season the top of the fish with salt & pepper. Flip over and let cook till fish colour starts changing and goes towards the centre. Sear on either side for a few seconds just to add colour.

 Serve with popcorn cauliflower, corn, green beans and cherry tomatoes.
